Preparation Instructions
- Preheat: Set your oven to 400°F (200°C).
- Prepare Rub: Crush the garlic cloves and chop the rosemary finely. Mix with olive oil and black pepper in a small bowl.
- Coat Chicken: Rub the mixture thoroughly over the chicken. Souro recommends letting it sit for 15 minutes to let the aromatic oils penetrate.
- Roast: Place in a baking dish and roast for 20-25 minutes until the internal temperature reaches 165°F.
- Citrus Finish: Squeeze fresh lemon over the chicken immediately after removing it from the oven. This provides the "bright" hit that salt usually provides.
