Preparation Instructions
- The Faux-Guac: Peel and boil the zucchini until soft. Drain well, mash with lime juice, cumin, and fresh cilantro. Set aside.
- Sauté: Cook chicken, peppers, and onions in olive oil with garlic powder and chili powder until golden.
- Assemble: Serve the hot filling in corn tortillas.
- Dollop: Add a generous scoop of your Zucchini "Guac" on top.
