The No-Salt Pasta Strategy

  1. Infuse Water: Do not add salt to your pasta water. Instead, drop a sprig of oregano or a smashed garlic clove into the boiling water to infuse the noodles from the inside out.
  2. Scan Check: Before opening your sauce, scan the barcode. We are looking for "Clean Label" sauces—no phosphoric acid or potassium additives.
  3. Layer Flavor: Heat the sauce on low. Add red pepper flakes for "heat" (which mimics the intensity of salt) and a pinch of dried oregano.
  4. Emulsify: Toss the cooked pasta directly into the sauce with 1 tablespoon of the pasta water. This helps the sauce stick without needing extra salt-heavy cheese for flavor.
